This black mole paste is a combination of black chiles and seeds that have been toasted to perfection over a wood fire comal. There are also nuts, raisins, sesame seeds, garlic, onion and herbs and spices all toasted, roasted and fried to bring out the essential flavors of each ingredient. The chile seeds are flamed to make the traditional black color of this paste. Simply add fried or pureed tomatoes, tomatillos, bread or plantains along with stock to reconstitute the sauce as desired.
