This red mole paste is hotter, yet is still very versatile. It is made of dried red chiles, including the smoked chile moras, combined with nuts, raisins, sesame seeds, garlic, onion and herbs and spices all toasted, roasted and fried to bring out the essential flavors of each ingredient. Serve with chicken, pork or rabbit or use to make a sauce for enchiladas. Add plantain and pineapple chunks and simmer until cooked through to make Manchamanteles, another favorite mole of Oaxaca that is great with fish. It also can be used to make Pozole Mixteco.
