The “cousin” of the Habanero, Chile Canario is grown in the Mixteca region and combined with yellow bell peppers and simmered in vinegar and sugar to make a rich hot and sweet marmalade. It is also great in dressings and marinades or adding to sautés or pasta dishes as a “secret” very tasty ingredient. Also put on meat and cheese platters for a wonderful accompaniment, or put an interesting twist on your next sandwich by adding this sweet and spicy jelly for a nice contrast to salty meats.
