A “protected denomination of origin,” the venerable name of San Marzano tomatoes can only be claimed, by law, for tomatoes cultivated according to tradition, hand-harvested nowhere but in the Sarnese-Nocerino region. Grown in just the right rich volcanic soil in hot sunny summers, San Marzano means unduplicable flavor. Yield per acre and handling processes are jealously regulated to maintain the reputation and quality of this prized favorite.
