These GAILLARD Black Truffle Peelings come from the prime truffle-producing regions of France, including Périgord and Quercy. Harvested from May to September, they are hand-selected and hand-peeled. Delicious in Beef Wellington, pasta, fish and cheese dishes. The J. Gaillard company, in Caussade en Quercy, has been harvesting truffles since 1906.


Highly prized in refined French and Italian cuisines, the truffle is a rare tuberous mushroom that grows underground near trees. With a rough, blackish brown exterior and an inner flesh of marbled grey-brown, it is hunted with the assistance of trained dogs and pigs. One of the world’s finest delicacies! The truffle’s intoxicating aroma and exquisite flavor led the ancient Greeks to imagine they were created by peals of thunder sending their power into the earth.
