EUGENIO BREZZI Black Summer Truffle Peelings Italy 7 oz
Packing: 7 oz (200 g)
The Eugenio Brezzi summer truffle or “scorzone”, known as TUBER AESTIVUM VITT sometimes reaches remarkable sizes and it looks like the black truffle. Its surface presents brownish pyramidal warts. It has an intense and aromatic flavour. Once cut the flesh becomes yellow. It grows both in sandy and clayey, woods and piny areas. We can find it in the woody areas of Tuscany. It is well appreciated and it is used to produce sausages and sauces. The picking season goes from May to December. With sweet aroma and nutty flavor, these EUGENIO BREZZI Italian Black Summer Truffle Peelings are delicious in Beef Wellington, white wine or champagne sauces, pasta, fish and cheese dishes. Highly prized in refined French and Italian cuisines, the truffle is a rare tuberous mushroom that grows underground near trees and is hunted with the assistance of trained dogs and pigs. One of the world’s finest delicacies! The Black Summer Truffle has a tough and gritty skin which helps to preserve this type longer than other truffles. It has a lighter, more delicate flavour than a winter truffle so it is important not to cook them but rather heat them through or serve them fresh and thinly shaved. The truffle’s intoxicating aroma and exquisite flavor led the ancient Greeks to imagine they were created by peals of thunder sending their power into the earth.
The Brezzi company is a leading producer of truffles in Italy. Beginning in the years following the second World War, Eugenio Brezzi, with his dog, started discovering truffles in the forest. His family business of processing truffles and producing truffle products grew quickly and earned international renown. Today Brezzi continues to bring the prized flavor of the forest into the world’s finest restaurants and gourmet shops, with carefully selected, authentic, all natural products. Naturally preserved, they contain no artificial colorings, preservatives or flavors.
