ARRIGONI Taleggio Bergamo is a Denominazione di Origine Protetta (a trademarked, original brandname) full-cream cow’s milk cheese. Named for the Taleggio Valley, in Italy’s upper Bergamo, Taleggio Bergamo is the result of ancient traditions, even today hand-salted and aged for close to two months in pine cases at 95 percent humidity at three degrees centigrade. Weekly applications of brine encourage the growth of the particular fermentation that creates the soft, thin rose-colored rind. Sweetly aromatic, Taleggio is perfect as part of a cheese course, and delicious as a savory addition to Italian recipes.
