ASTURIANA Cabrales Pastor Picon Blue is the most famous Asturian cheese and one of the piquant Spanish blue cheeses. Tangy and lively in flavor, Pastor Picon is a “shepherd’s cheese,” a natural, traditional cheese of the Spanish countryside. Production of Cabrales is restricted to a small region in the north of Spain. Aged from two to six months in mountain caves, between 45 and 55 degrees and at a relative humidity 90 90 percent, Pastor Picon’s blue traces are developed from the spores of penicillium.
