Manchego cheese is the most well-known and important sheep’s milk cheese in Spain. The cheese’s shape is very typical and defined, due to the traditional use of esparto grass molds which imprints a pattern of zigzag along the side of the cheese. The small wooden boards used for pressing the cheese also imprints the typical wheat ear pattern on the top and bottom.


The Fratelli Felici Manchego cheese is a private label and authentic DO Manchego cheese imported from Spain, made by the well renowned dairy company Cheese from Spain S.L., from Albacete Spain, the same producers of La Cueva del Abuelo or the Grand Father's Groove and El Campero or The Farmer.


This Manchego is ideal for cheese lovers that dislike the strong and aggressive flavours of cheeses. It is also certified by the Denomination of Origin, that guarantees with its label, the ingredients, age, quality and pure sheep milk from La Mancha region.


Its maturity is minimum 90 days for the half cured and 6 month for the Aged or Reserva. It could be artisan (raw milk) or industrial (pasteurized milk).
