La Villa’s Saba Mosto Cotto is one of the traditional products of the Emilia-Romagno region that has enriched our table for over 2000 years. Mosto Cotto means “cooked grape juice” and is obtained by reducing the must of the Trebbiano grapes directly over open fire to sweet, unfermented syrup. The result is wonderfully sweet, unconcentrated prebalsamic vinegar with a rich, caramelized grape flavor. It is very versatile and here are just a few examples of how to utilize it in your kitchen: drizzle on ice cream and fresh fruit – just delicious!!! Or mix into plain or Greek yoghurt or ricotta, use as a condiment for beans, polenta, squash or chestnuts, with meat or shell fish, as substitute for sweeteners in baking and cooking and mixed with sparkling water, it will quench your thirst on a hot summer day!
