Traditional Balsamic Vinegar of Modena is a Protected Designation of Origin. Each distinctive bottle—round with a rectangular solid glass base—carries its own numbered seal and is beautifully embedded in a gift box. This Affinato, aged for at least 12 years, is second only to the highest quality Traditional Balsamic Vinegar in the world, the Extravecchio, also available.
Traditional Balsamic Vinegar is the felicitous result of special environmental conditions in the Italian region of Modena. Particular varieties of grapes, mainly the Trebbiano, are born into optimal growing conditions, and then nurtured through the centuries-old processes, with skills passed down from generation to generation.
The grapes, harvested late and deeply ripe, are crushed as if for wine, but before fermentation begins, the pressings, or “must,” is simmered slowly in open vats to a concentration of between 30 and 50 percent. After the resulting sweet, dark elixir begins to ferment through natural yeasts and cultures, craftsmen of skilled sensitivity to a balsamic vinegar’s natural evolution accompany it through a series of wooden casks in a slow aging under the producer’s watchful eye. The influence of each type of wood contributes to the characteristic savors, fragrances and hues of the vinegar. It is in these elaborate processes that the balsamic vinegar’s characteristics reach true perfection.
