Extravecchio is finest of fine balsamic vinegars from a venerable line, only one of two to merit the “Traditional” designation and the only one to earn the title of Extravecchio (very old). This balsamic vinegar ages at least 25 years in the oldest of the famed vintage barrels of the 17th century Giusti vinegar cellar. This matchless heritage in the world’s largest collection of rare barrels provides the optimal nurturing for the world’s finest vinegars, lending an inimitable complexity as it draws upon the aromas of centuries of exquisite balsamics.
This precious pinnacle of balsamic vinegars begins with Trebbiano grapes, white and sweet, harvested late, grown in the low hills around Castelvetro. Crushed as if to make wine, the pressed grapes—or “ must”—is kept sweet and protected from fermentation. It is then filtered, brought to a slow boil and simmered into a concentration: sweet, dark and heavy. Progressing purposefully through a series of ever smaller barrels of various woods, while continually enriched by newly cooked must—a delicate operation requiring the long-nurtured skills and experience of the craftsman—the balsamic vinegar ripens in maturity and complexity.
