Sicilian Castelvetrano olives have become wildly popular in the last few years. Whether itís the vivid, almost unnaturally green color or mild and buttery flavor, once you try them you will not get enough of them. Grown primarily in a small town of the same name in the Sicilian province of Trapani, Castelvetranos are harvested young and cured in lightly salted brine, which accounts for their bright green hue and meaty texture. Their mild, nuanced flavor, somehow both salty and sweet but without contradicting, will not only appeal to the adventurous olive fans but also to those cautious and safe olive-eaters who usually shy away from the strong olive taste. You can put them in sauces or braises and they will not overpower the dish, throw them in with braised lamb, and crack them into vinaigrettes or pasta sauces. But the best of them you will get when pitted and dropped into martinis, as a simple snack on antipasti platters for nibbling with a glass of wine or over burrata.
A note: Castelvetrano olives oxidize rather quickly, especially if removed from the brine. So itís best to keep them submerged in the liquid when you are storing them at home. Also keep your fingers out of the brine, which can promote spoilage and oxidation.
