The Capirete Sherry Vinegar “20” Reserva Denomination of Origin is characterized by its distinctive quality as a result of a careful and slow elaboration. Among the outstanding attributes which make this product unique and with no substitute in the gastronomy world: its old amber color, delicate aroma and unique flavor. These exceptional attributes are achieved through a prolonged aging process in American Oak barrels with the traditional system of solera. Because of the constant quality control applied and the meticulous elaboration, this Sherry Vinegars is very concentrated in acidity and aromas and should therefore be used sparingly.
Produced and bottled by Bodegas José Páez Lobato in the Jerez region in Andalucia, in the sunny south of Spain where the climate is hot and dry, with ocean breezes continually bringing fresh air, all important components in the vinegar production. Capirete Sherry Vinegar is produced from "Palomino" grapes, grown in the unique microclimate of the Sherry region.
JOSE PAEZ LOBATO is a family enterprise specialized in the elaboration of fine Sherry Vinegar for the past 60 years. The Bodega or cellar was founded in 1933 by Francisco Páez Sánchez and has today 4.000 American Oak barrels of 500 liters each as well as their own vineyards, bottling and refrigerating capacity for the treatment of wines and vinegars.
