The Solera 8 is aged for eight years in oak barrels producing a slightly more intense flavour. Deep amber in colour with a stronger aroma this vinegar goes well with both red meats and fish dishes as well as salads and salsa. (Denominacion de Origen)

Produced and bottled by Bodegas José Páez Lobato in the Jerez region in Andalucia, in the sunny south of Spain where the climate is hot and dry, with ocean breezes continually bringing fresh air, all important components in the vinegar production. Capirete Sherry Vinegar is produced from "Palomino" grapes, grown in the unique microclimate of the Sherry region.

JOSE PAEZ LOBATO is a family enterprise specialized in the elaboration of fine Sherry Vinegar for the past 60 years. The Bodega or cellar was founded in 1933 by Francisco Páez Sánchez and has today 4.000 American Oak barrels of 500 liters each as well as their own vineyards, bottling and refrigerating capacity for the treatment of wines and vinegars. Sherry Vinaigrette Salad Dressing

1 cup olive oil
1/3 cup sherry vinegar
1 teaspoon dijon mustard
1/2 teaspoon Salt
Black pepper to taste

In a bowl, put salt and pepper, sherry vinegar and dijon mustard. To emulsify the vinegar and olive oil, either drizzle in olive oil slowly and wish for about 20 minutes (only recommended if you have plenty of time and strength in your arm and do not have a blender or shaker). If you do have a blender or shaker, just pour everything together and mix well until vinegar and oil are well emulsified. Serve immediately or shake/blend again before use. Bon appetit!
