Biscottificio Belli was founded in 1958 by Enzo Belli, who grew up learning how to create traditional Tuscan pastry and the intricacies of yeast from his grandfather, Aristide, a master baker. Using his family expertise, he founded a small artisanal pastry and cookie shop. The philosophy behind this success in pastry making is simple but effective: to carefully choose the best ingredients, carefully follow the traditional recipes for the best cookies and pastries, and finally, treat customer needs with the utmost attention. It's the same philosophy followed by the founderís wife, Carla, and their children, Barbara and John, who continue the founderís work today.
