Prosciutto is the Italian word for ham. In English, the term prosciutto is almost always used for a dry-cured ham that is usually sliced thinly and served uncooked; this style is called prosciutto crudo in Italian and is distinguished from cooked ham: prosciutto cotto. Commonly associated with Tuscany and Emilia, the most renowned and cherished legs of prosciutto come from central and northern Italy, such as those of Parma, Friuli-Venezia Giulia, and San Daniele.
Sweeter and a deeper red than Prosciutto di Parma, BERETTA Prosciutto di San Daniele is an uncooked, all natural ham, aged 16 to 18 months. It has a delicate flavor and distinctive aroma, with the famous guitar-shape of the full ham, which includes the ham hock. Other than pork, along with time and experience, a little sea salt--making up less than six percent of a fully aged ham-- is the only other ingredient used to create a Prosciutto di San Daniele.
This specialty meat comes from San Daniele del Friuli in the province of Udine in the northeast of Italy. The livestock is bred exclusively on approved farms in ten designated regions in central-north Italy, including Lombardy. Its production follows stringent Denominazione di Origine Protetta (Protected Denomination of Origin) standards for the animals’ breeding and feeding. All production is under the careful watch of of the Consortium of Prosciutto di San Daniele.
Production of this type of prosciutto originated in the Celtic-Roman times. In the Middle Ages, when the Patriarch Aquileia established his summer residence in San Daniele, he demanded the payment of taxes in the form of ham. Prosciutto di San Daniele was featured in the dining rooms of the Council of Trent; it has long been favored by royalty.
