BIELLESE SALUMERIA Soppressata di Chingiale, or Wild Boar Sopressata is a sausage of coarsely ground meat from a wild boar, trimmed from the shoulder, marbled lightly with fat, then seasoned, cured, and dried. The result is a sweet, melt-in-your mouth yet robust cured sausage typical of central Italy. Soppressata is suited to affettato misti, sandwiches, or a late night snack.

The company originated in Biella, in Italy’s northwest province of Piedmonte, near the French border, where the founders learned the craft of sausage-making in the best traditions of these two countries both known for amazing food. Biellese Salumeria set up shop in New York in 1945 and has been named by the New York Times as “perhaps the best European-style cured pork products in the U.S.”
During summer time and hotter months, this item is recommended to be shipped 3rd Day Air to ensure freshness. During other cooler months, item may be shipped ground if temperature allows. We cool this item with ice blocks but dry ice is also available for an extra charge. If you would like dry ice to be used, please call to let us know. Final shipping costs will be not be reflected on website order if dry ice is requested. Final shipping costs will be calculated once the item is packaged.
