BIELLESE SALUMERIA Porcini Barbera Salami is coarsely ground Berkshire shoulder, trimmed off the shoulder, mixed with Barbera wine, and Porcini mushrooms, after its seasoned, cured, and dried.

The company originated in Biella, in Italy’s northwest province of Piedmonte, near the French border, where the founders learned the craft of sausage-making in the best traditions of these two countries both known for amazing food. Biellese Salumeria set up shop in New York in 1945 and has been named by the New York Times as “perhaps the best European-style cured pork products in the U.S.”
