Life is sweet in Argentina! Dulce de Leche ("milk candy" in Spanish) is a rich and decadent sauce or syrup, similar in flavor to caramel. Unlike caramel, however, which is made by heating sugar, Dulce de Leche is prepared by slowly heating sweetened milk, meaning milk and sugar are cooked together to make a caramel. It is also similar to sweetened condensed milk, but much more thicker and caramelized. In Argentina, we consider this delicacy the national sweet ingredient and use it as a spread, inside our morning pastries as well as in various dessert recipes including panqueques – crepes, flan, ice cream, bread pudding, and even served with cheese.
