Olive Oil is a very important part of Italian cooking and has been around since ancient times. Olive Oil is simply pure olive fruit juice. In the Olive Oil production there are several different harvests of olives throughout the growing period. The flavor of the oil is affected by these harvests. The earlier the harvest, the stronger, greener and more bitter the olive oilís flavor. The later the harvest, the more buttery and mild the olive oil will be. Olive oil can be used in salad dressings, for cooking, as an ingredient in soaps, and as an emollient. We simply prefer to cook with it and most of all we prefer Extra Virgin Olive Oil.
