Piquillo Peppers are a type of heatless red pepper traditionally grown in Northern Spain. This delicacy got its name from its conical shape that resembles a bird's beak (piquillo = spanish for "beak"). When ripe, piquillo peppers are vibrant red in color, but, due to harvesting at different stages of ripeness, you can also find green and green and red colored ones. These seductive Peppers are hand picked and then roasted over open fires. Once cooked, the Piquillo-Peppers are then peeled, all by hand, and packed in their own juices in jars or tins. The smoky-sweet flavor comes from the special roasting process. You can enjoy these Piquillo Peppers simply drizzled with olive oil, stuffed as a "tapa" or in soups and stews.
